Instructions
  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce several times with a fork.
  2. Bake potatoes for 60-75 minutes, or until tender when pierced with a fork.
  3. While potatoes are baking, prepare the chicken. In a bowl, combine Chicken ingredients and toss to coat.
  4. Heat a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes per side, or until cooked through.
  5. Remove chicken from skillet and shred with two forks.
  6. In a saucepan, combine BBQ Sauce, Apple Cider Vinegar, Worcestershire Sauce, and Brown Sugar. Simmer for 10 minutes, stirring occasionally.
  7. Add shredded chicken to the BBQ Sauce and toss to coat.
  8. Once potatoes are cooked, carefully slice open and fluff the insides with a fork.
  9. Top each potato with BBQ Chicken, Monterey Jack Cheese, Sour Cream, and Chives.
  10. Serve immediately.
