Instructions
Roast Poblano Peppers: Char Poblano Peppers over an open flame or under a broiler until blackened on all sides. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the skin, remove the seeds and membranes, and dice.
Prepare Chipotle Crema: In a small bowl, combine Mexican Crema, minced Chipotle Peppers in Adobo Sauce, and Lime Juice. Mix well.
Sprinkle half of the tortillas with Asadero Cheese, Oaxaca Cheese, Smoked Chicken, Roasted Corn, and diced Poblano Peppers. Top with the remaining tortillas.
Heat Avocado Oil in a cast iron skillet over medium heat. Place quesadillas in the skillet and cook for 2-3 minutes per side, or until golden brown and the cheese is melted and bubbly.
Cut into wedges and serve immediately with Chipotle Crema for dipping.
