Instructions
- Combine Chili powder, Cumin, Smoked paprika, Cayenne pepper, Garlic powder, and Onion powder to create a homemade Taco seasoning. Season the Ground chuck with the Taco seasoning and cook according to package directions. Drain off any excess grease. Set aside.
- Cook the Cavatappi pasta according to package directions. Drain and set aside.
- In a large pot, melt the Butter over medium heat. Whisk in the All-purpose flour and cook for 1-2 minutes, creating a roux.
- Gradually whisk in the Whole milk, stirring constantly until the sauce thickens. Bring to a simmer.
- Reduce heat to low and stir in the Sharp cheddar cheese, Monterey Jack cheese, and Pepper jack cheese until melted and smooth. Season with Salt and Black pepper.
- Add the cooked pasta and the seasoned Ground chuck to the cheese sauce. Stir to combine.
- Serve immediately, topped with Diced Roma tomatoes, Sliced Kalamata olives, Mexican crema, and Chopped cilantro.
