Instructions
  1. Combine Chili powder, Cumin, Smoked paprika, Cayenne pepper, Garlic powder, and Onion powder to create a homemade Taco seasoning. Season the Ground chuck with the Taco seasoning and cook according to package directions. Drain off any excess grease. Set aside.
  2. Cook the Cavatappi pasta according to package directions. Drain and set aside.
  3. In a large pot, melt the Butter over medium heat. Whisk in the All-purpose flour and cook for 1-2 minutes, creating a roux.
  4. Gradually whisk in the Whole milk, stirring constantly until the sauce thickens. Bring to a simmer.
  5. Reduce heat to low and stir in the Sharp cheddar cheese, Monterey Jack cheese, and Pepper jack cheese until melted and smooth. Season with Salt and Black pepper.
  6. Add the cooked pasta and the seasoned Ground chuck to the cheese sauce. Stir to combine.
  7. Serve immediately, topped with Diced Roma tomatoes, Sliced Kalamata olives, Mexican crema, and Chopped cilantro.
