A more complex chili with a deeper flavor profile, featuring browned bratwurst, a sofrito base, and a blend of premium spices.
Instructions
- Slice Bratwurst into 1/2 inch pieces.
- Heat Olive Oil in a large pot or Dutch oven over medium heat.
- Add Onion, Red Bell Pepper, Yellow Bell Pepper, Garlic, and Jalapeno (Sofrito) and cook until softened, about 8-10 minutes.
- Add Bratwurst to the pot and brown on all sides.
- Pour in Fire Roasted Crushed Tomatoes, Tomato Sauce, and Dark Beer. Stir to combine.
- Add Chili Powder, Cumin, Smoked Paprika, Ancho Chili Powder, Cayenne Pepper, Cocoa Powder, Salt, and Black Pepper. Stir well.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 45 minutes, or up to 1.5 hours, stirring occasionally.
- Stir in Kidney Beans and Pinto Beans during the last 15 minutes of cooking.
- Serve hot, garnished with Shredded Cheddar Cheese, Sour Cream, and Chopped Cilantro.
