Instructions
  1. Slice Bratwurst into 1/2 inch pieces.
  2. Heat Olive Oil in a large pot or Dutch oven over medium heat.
  3. Add Onion, Red Bell Pepper, Yellow Bell Pepper, Garlic, and Jalapeno (Sofrito) and cook until softened, about 8-10 minutes.
  4. Add Bratwurst to the pot and brown on all sides.
  5. Pour in Fire Roasted Crushed Tomatoes, Tomato Sauce, and Dark Beer. Stir to combine.
  6. Add Chili Powder, Cumin, Smoked Paprika, Ancho Chili Powder, Cayenne Pepper, Cocoa Powder, Salt, and Black Pepper. Stir well.
  7. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 45 minutes, or up to 1.5 hours, stirring occasionally.
  8. Stir in Kidney Beans and Pinto Beans during the last 15 minutes of cooking.
  9. Serve hot, garnished with Shredded Cheddar Cheese, Sour Cream, and Chopped Cilantro.
