Instructions
  1. Preheat oven to 450°F (232°C).
  2. To make the Biscuits, whisk together the Flour, Baking Powder, Baking Soda, and Salt in a large bowl.
  3. Cut in the Cold Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gradually add the Buttermilk and Heavy Cream, mixing until just combined. Do not overmix.
  5. Turn dough out onto a lightly floured surface and pat down to about 3/4 inch thickness. Cut out biscuits using a 2-inch cutter.
  6. Place biscuits on an ungreased baking sheet and bake for 12-15 minutes, or until golden brown.
  7. While biscuits are baking, make the Gravy. Cook the Italian Sausage in a large skillet over medium heat until browned and crumbled.
  8. Drain off any excess grease, leaving about 2 tablespoons in the skillet.
  9. Sprinkle the Flour over the sausage and cook for 1 minute, stirring constantly.
  10. Gradually whisk in the Whole Milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5-7 minutes.
  11. Stir in the Black Pepper, Salt, and Cayenne Pepper. Serve the Gravy hot over the warm Biscuits.
