Instructions
  1. Brine Cucumbers: In a non-reactive bowl, combine Cucumbers with 1 tbsp Salt. Toss and let sit for 4 hours, refrigerated, to draw out excess moisture.
  2. Prepare Brine: In a large pot, combine all Brine ingredients and bring to a simmer, stirring until Sugar is dissolved. Do not boil.
  3. Pack Jars: Pack Cucumbers tightly into sterilized jars, leaving 1/2 inch headspace. Add Shallots, Dill, Bay Leaves, and Garlic to each jar.
  4. Pour Brine: Gently pour warm Brine over Cucumbers, leaving 1/2 inch headspace.
  5. Remove Air Bubbles: Remove air bubbles and adjust lids and rings. Process in a boiling water bath for 20 minutes.
  6. Cool and Store: Let cool completely before checking seals. Store in a cool, dark place for at least 2 weeks to allow flavors to develop.
