Rub the brisket generously with the Coffee Rub.
Smoke brisket at 225°F (107°C) for 6-8 hours, or until fork-tender. Use a wood like oak or hickory.
While brisket is smoking, prepare the Chipotle Avocado Crema. Combine all Chipotle Avocado Crema ingredients in a food processor or blender and blend until smooth.
Once brisket is cooked, let it rest for 30 minutes before shredding with two forks.
Warm tortillas according to package directions.
Assemble tacos by filling each tortilla with shredded brisket, cabbage, pickled red onions, and cilantro. Top with Chipotle Avocado Crema and serve.
