1 pound Broccoli-fresh or frozen florets
1 cup Long-grain white rice-uncooked
1/2 cup Butter
1/2 cup All-purpose flour
3 cups Milk

A comforting and easy-to-make broccoli rice casserole, perfect for a weeknight side dish.
Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Cook rice according to package directions. Steam or boil broccoli until tender-crisp.
  3. In a saucepan, melt Butter from Sauce ingredients over medium heat. Whisk in Flour and cook for 1 minute, creating a roux.
  4. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Cook until thickened, about 5-7 minutes.
  5. Remove from heat and stir in Salt and Pepper from Sauce ingredients.
  6. Combine cooked rice, broccoli, and Sauce in the prepared baking dish. Stir in Cheddar cheese from Cheese ingredients.
  7. In a small bowl, combine Crushed Ritz crackers and Melted butter from Topping ingredients. Sprinkle over the casserole.
  8. Bake for 20-25 minutes, or until bubbly and golden brown.
