Preheat oven to 350°F (175°C).
In a medium bowl, combine all Sauce ingredients and mix well.
In a separate bowl, combine Chicken and the sauce mixture. Stir to coat evenly.
Add Cheddar Cheese, Monterey Jack Cheese, and Blue Cheese to the chicken mixture and stir until well combined.
Pour the mixture into a baking dish.
Bake for 20-25 minutes, or until bubbly and heated through.
Garnish with Green Onions before serving.
