Cook Chicken: Grill, bake, or pan-fry chicken until cooked through (internal temperature of 165°F / 74°C). Let cool slightly and shred.
Prepare Sauce: In a small saucepan, combine Sauce ingredients. Heat over medium heat, stirring until butter is melted and sauce is well combined.
Combine: In a bowl, toss shredded chicken with Buffalo sauce.
Assemble: Spread mayonnaise on one side of each bread slice. Place two slices of bread, mayonnaise-side down. Top with Buffalo chicken, Swiss cheese, and blue cheese crumbles. Top with remaining bread slices.
