2 tbsp Olive Oil
1 large Onion-diced
3 Celery stalks-diced
3 Carrots-diced

Instructions
  1. In a large pot or Dutch oven, heat Olive Oil from Vegetables over medium-high heat.
  2. Add Ground Buffalo from Buffalo and cook, breaking it up with a spoon, until browned.
  3. Add Onion, Celery, Carrots, and Jalapeno from Vegetables to the pot and cook until softened, about 8-10 minutes.
  4. Stir in Chili Powder, Cumin, Smoked Paprika, Chipotle Powder, Salt, and Black Pepper from Seasoning.
  5. Add Diced Tomatoes and Frozen Corn from Vegetables.
  6. Pour in Beef Broth from Liquid and bring to a boil.
  7. Reduce heat to low, cover, and simmer for at least 45 minutes, or up to an hour and a half, stirring occasionally.
  8. Just before serving, stir in Smoked Gouda from Finishing until melted and creamy.
