Instructions
  1. First, prepare the Pickled Red Onions: Combine Apple Cider Vinegar, Water, Sugar, and Salt in a small saucepan. Bring to a simmer, stirring until sugar and salt dissolve. Add Red Onion and remove from heat. Let sit for at least 20 minutes.
  2. In a medium bowl, combine all Ricotta Mixture ingredients and mix well.
  3. Add the shredded Smoked Chicken to the ricotta mixture and stir to coat evenly.
  4. Lay out the Tortillas. Divide the chicken mixture evenly between the two tortillas, spreading it down the center.
  5. Top with Arugula and Pickled Red Onions.
  6. Fold in the sides of the tortilla and roll tightly to form a wrap. Serve immediately.
