Instructions
  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
  2. In a medium bowl, whisk together all Egg Mixture ingredients until well combined.
  3. In a small saucepan, combine Hot Sauce, Butter, and White Vinegar. Heat over medium heat until butter is melted and sauce is combined. Set aside.
  4. In a separate bowl, combine Cooked Elbow Macaroni, Sharp Cheddar Cheese, and Monterey Jack Cheese. Mix well.
  5. Gently fold the mac and cheese mixture into the egg mixture.
  6. Add the Buffalo Sauce to the mac and cheese mixture and stir to combine.
  7. Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  8. Sprinkle Blue Cheese Crumbles and Chopped Chives over the top of each egg bite.
  9. Bake for 22-27 minutes, or until a knife inserted into the center comes out clean.
  10. Let cool slightly before removing from the muffin tin.
