Instructions
Brine Chicken: Combine Buttermilk, Kosher salt, Brown sugar, and Hot sauce in a large bowl. Add Chicken breasts, ensuring they are fully submerged. Refrigerate for at least 4 hours, or preferably overnight.
Prepare Pickled Onions: Combine Red onion, Apple cider vinegar, Water, Sugar, and Salt in a small saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Let cool completely.
Cook Chicken: Remove Chicken from brine and pat dry. Grill, bake at 375°F (190°C) for 20-25 minutes, or pan-fry until cooked through (internal temperature of 165°F/74°C).
Prepare Sauce: In a small bowl, combine Sauce ingredients. Mix well.
Assemble Sandwich: Place cooked Chicken on Artisanal potato buns. Top with Arugula and Pickled Onions. Drizzle with Sauce. Serve immediately.
