Caesar Salad
An elevated Caesar salad featuring grilled romaine hearts, a creamy homemade dressing, and crispy parmesan crisps. This version focuses on texture and presentation.
Preheat oven to 350°F (175°C). Spread Parmesan cheese for Crisps in a thin layer on a baking sheet lined with parchment paper. Bake for 5-7 minutes, or until golden and crispy. Let cool and break into pieces.
Toss Ciabatta bread cubes with Olive oil and Garlic powder. Bake for 10-12 minutes, or until golden brown and crispy. Set aside.
To make the Dressing, whisk Egg yolks, Olive oil, Lemon juice, Garlic, Anchovies, Parmesan cheese, and Black pepper in a bowl until emulsified and creamy.
Brush Romaine hearts with Olive oil and grill over medium heat for 2-3 minutes per side, or until slightly charred.
Arrange grilled Romaine hearts on plates. Drizzle with Dressing. Top with Parmesan cheese, Crisps, and Croutons. Serve immediately.
