1/2 lb Ground beef
1/2 lb Smoked sausage-sliced
4 oz Chicken livers-cleaned
1 1/2 cups Onion-diced
1 1/2 cups Bell pepper-diced

A more refined version of dirty rice, incorporating smoked sausage and chicken livers for added depth of flavor.
Instructions
  1. Heat Vegetable oil and Butter in a large pot or Dutch oven over medium-high heat.
  2. Add Ground beef and Smoked sausage and cook, breaking up the meat, until browned. Drain off any excess grease.
  3. Add Chicken livers and cook until browned on all sides, about 3-5 minutes. Remove livers and set aside.
  4. Add the Holy Trinity (Onion, Bell pepper, Celery) to the pot and cook until softened, about 5-7 minutes.
  5. Stir in Cajun seasoning, Garlic powder, Smoked paprika, Black pepper, and Cayenne pepper. Cook for 1 minute more.
  6. Deglaze the pot with Dry sherry, scraping up any browned bits from the bottom.
  7. Add Long-grain rice to the pot and stir to coat with the meat and vegetable mixture.
  8. Return Chicken livers to the pot. Pour in Chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  9. Fluff with a fork and serve hot.
