Instructions
- In a large pot or Dutch oven, combine the Beef, Water, onion, Garlic, oregano, cumin, and bay leaf.
- Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the beef is tender.
- Add the Carrots, Celery, Corn, and Potatoes to the pot. Continue to simmer for 20 minutes.
- Add the Cabbage and Sweet potato and simmer for another 15 minutes, or until the vegetables are tender.
- Remove the bay leaf.
- Season with salt and pepper to taste.
- Serve hot, garnished with Cilantro and lime wedges.
