Instructions
  1. In a large pot or Dutch oven, combine the Beef, Water, onion, Garlic, oregano, cumin, and bay leaf.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the beef is tender.
  3. Add the Carrots, Celery, Corn, and Potatoes to the pot. Continue to simmer for 20 minutes.
  4. Add the Cabbage and Sweet potato and simmer for another 15 minutes, or until the vegetables are tender.
  5. Remove the bay leaf.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with Cilantro and lime wedges.
