1 Pound Dried Navy Beans
1 Smoked Ham Hock
4 Ounces Salt Pork, diced
1 Onion, chopped
3 Cloves Garlic, minced

Instructions
  1. Soak Beans overnight in plenty of water. Drain and rinse.
  2. In a large pot or Dutch oven, combine Beans, Pork, Aromatics, and enough water to cover by 2 inches.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 7-9 hours, or until beans are tender. Stir occasionally, adding more water if needed.
  4. Remove Ham Hock after 6 hours. Shred the meat from the bone and return the meat to the pot. Discard the bone.
  5. In a small bowl, whisk together Seasoning ingredients.
  6. Add Seasoning to the beans during the last hour of cooking. Stir well.
  7. Continue to simmer for another hour, allowing the flavors to meld.
