Instructions
  1. In a medium bowl, combine the Apple Base ingredients and toss to coat. Set aside.
  2. Make the Homemade Caramel: In a saucepan, combine the Granulated sugar and Water. Cook over medium heat, without stirring, until the sugar dissolves and turns a deep amber color.
  3. Carefully whisk in the Heavy cream (it will bubble vigorously). Remove from heat and stir in the Butter and Vanilla extract until smooth.
  4. Stir in the Bourbon. Let the caramel cool slightly.
  5. Pour the caramel over the diced apples and stir gently to coat. Fold in the toasted Pecans.
  6. Sprinkle with Fleur de sel before serving. Serve warm or chilled.
