Instructions
  1. Preheat oven to 400°F (200°C). Soak cedar planks in water for at least 30 minutes.
  2. In a large bowl, combine all Vegetables.
  3. In a separate small bowl, whisk together all Marinade ingredients.
  4. Pour Marinade over Vegetables and toss to coat evenly.
  5. Place Vegetables on the soaked cedar planks.
  6. Roast for 30-40 minutes, or until vegetables are tender and slightly caramelized, flipping halfway through.
  7. While vegetables roast, prepare the Brown Butter Sage Sauce: Melt Butter in a saucepan over medium heat. Continue cooking until butter turns golden brown and has a nutty aroma. Add Sage Leaves and cook for 1-2 minutes, until crispy. Remove from heat.
  8. Transfer roasted vegetables to a serving dish. Drizzle with Brown Butter Sage Sauce and garnish with Toasted Pecans. Serve immediately.
