1 lb Chicken tenderloins-cut into 1 inch pieces
4 cups Water
1/4 cup Kosher salt
2 tbsp Sugar
2 cups Corn flakes-finely crushed

Gourmet chicken bites featuring a sophisticated Parmesan and herb-infused cereal crust, served with a bright and creamy lemon aioli.
Instructions
  1. Combine all Brine ingredients in a bowl and dissolve salt and sugar. Add Chicken and brine for 30 minutes.
  2. Whisk together all Lemon Aioli ingredients in a small bowl and refrigerate.
  3. In a separate bowl, combine all Cereal Coating ingredients.
  4. Remove Chicken from brine, pat dry, and dredge in the Cereal Coating, pressing to adhere.
  5. Heat Avocado oil in a large skillet over medium-high heat.
  6. Fry the Chicken bites in batches for 3-4 minutes per side, or until golden brown and cooked through.
  7. Remove bites and place on a paper towel-lined plate to drain excess oil. Serve immediately with Lemon Aioli.
