Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
Caramelize Shallots: Melt Butter in a skillet over medium-low heat. Add Shallot and cook, stirring occasionally, for 20-25 minutes, or until deeply golden brown and caramelized. Set aside.
Prepare Truffle Aioli: In a small bowl, whisk together Mayonnaise, Truffle Oil, minced Garlic, and Lemon Juice. Set aside.
In a large skillet, cook Wagyu Ground Beef over medium heat until browned, breaking it up with a spoon. Drain off any excess grease.
Stir in Seasoning into the cooked Wagyu beef.
Place one Duck Fat Fried Tater Tot in each muffin cup, pressing it slightly into the bottom and up the sides to form a cup.
Fill each tater tot cup with the Wagyu beef mixture, then top with Caramelized Shallots.
Top each cup with shredded Aged Cheddar Cheese.
Bake for 15-20 minutes, or until the cheese is melted and bubbly and the tater tots are golden brown.
Remove from oven and let cool slightly. Drizzle with Truffle Aioli and garnish with finely chopped Chives before serving.
