Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
Caramelize Onions: Heat Olive Oil in a skillet over medium-low heat. Add Yellow Onion and cook, stirring occasionally, for 20-25 minutes, or until golden brown and caramelized. Set aside.
In a large skillet, cook Ground Beef over medium heat until browned, breaking it up with a spoon. Drain off any excess grease.
Stir in Seasoning into the cooked ground beef.
In a small bowl, combine all Sauce ingredients. Add the sauce to the ground beef and stir to combine.
Place one Tater Tot in each muffin cup, pressing it slightly into the bottom and up the sides to form a cup.
Fill each tater tot cup with the ground beef mixture, then top with Caramelized Onions.
Top each cup with Shredded Cheddar and Monterey Jack Cheese Blend.
Bake for 20-25 minutes, or until the cheese is melted and bubbly and the tater tots are golden brown.
Remove from oven and let cool slightly. Garnish with Diced Pickles and Chopped Fresh Parsley before serving.
