Instructions
  1. In a medium bowl, gently combine the Lobster, Filling ingredients (mashed avocados, mascarpone cheese, sriracha, tamari, white pepper, chives, and lime juice). Be careful not to overmix.
  2. Soften a spring roll wrapper in warm water according to package directions. Lay it flat on a clean surface.
  3. Place approximately 1/4 cup of the lobster and avocado mixture in the center of the wrapper.
  4. Fold the sides of the wrapper over the filling, then tightly roll from the bottom up. Repeat with the remaining wrappers and filling.
  5. Heat grapeseed oil in a deep fryer or large pot to 350°F (175°C).
  6. Carefully fry the egg rolls in batches for 2-3 minutes per side, or until golden brown and crispy.
  7. Remove the egg rolls from the oil and place them on a wire rack to drain excess oil.
  8. In a small bowl, whisk together the Mango chutney, black rice vinegar, and grated ginger to create the dipping sauce.
  9. Serve immediately with the dipping sauce.
