Instructions
  1. In a medium bowl, combine the Chicken, Filling ingredients (mashed avocados, cream cheese, sriracha, soy sauce, garlic powder, black pepper, cilantro, and green onions). Mix well until fully combined.
  2. Lay out an egg roll wrapper on a clean surface. Place approximately 1/4 cup of the chicken and avocado mixture in the center of the wrapper.
  3. Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll tightly to form an egg roll, moistening the top corner with water to seal.
  4. Repeat with the remaining wrappers and filling.
  5. Heat peanut oil in a deep fryer or large pot to 350°F (175°C).
  6. Carefully fry the egg rolls in batches for 2-3 minutes per side, or until golden brown and crispy.
  7. Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.
  8. In a small bowl, whisk together the Sweet chili sauce, rice vinegar, and sesame oil to create the dipping sauce.
  9. Serve immediately with the dipping sauce.
