An elegant take on the classic, featuring homemade vanilla bean pastry cream, macerated strawberries with balsamic, and delicate almond flour biscuits. Served deconstructed for a refined presentation.
To make the Almond Flour Biscuits, whisk together the Almond Flour, Flour, Powdered Sugar, Baking Powder, and Salt in a large bowl.
Cut in the Butter until the mixture resembles coarse crumbs. Gradually add Ice Water, mixing until just combined.
Wrap dough in plastic wrap and chill for 30 minutes. Roll out to 1/2 inch thickness and cut into shapes. Bake at 375°F (190°C) for 12-15 minutes.
For the Strawberry Balsamic Maceration, combine Strawberries, Sugar, Balsamic Glaze, and Lemon Juice. Let sit for at least 30 minutes.
To make the Vanilla Bean Pastry Cream, heat Milk and Vanilla Bean in a saucepan. Whisk together Sugar, Egg Yolks, and Cornstarch. Temper the egg mixture with the hot milk, then return to the saucepan and cook until thickened. Stir in Butter. Chill completely.
To assemble, place a dollop of Pastry Cream on a plate. Arrange Strawberries around the cream, and place a biscuit alongside. Garnish with Fresh Mint Leaves.
