Instructions
  1. Marinate Chicken with Olive oil, Garlic powder, Oregano, Salt, and Pepper for at least 30 minutes.
  2. Cook Chicken in a skillet over medium-high heat until cooked through, about 6-8 minutes per side. Let rest and then slice.
  3. Cook Pasta according to package directions.
  4. While pasta cooks, prepare Sauce: Heat Olive oil in a large skillet over medium heat. Add Garlic and cook until fragrant, about 30 seconds.
  5. Deglaze the pan with White wine, scraping up any browned bits.
  6. Add Heavy cream and Chicken broth to the skillet. Bring to a simmer.
  7. Stir in Sun-dried tomatoes, Parmesan cheese, Lemon juice, and Red pepper flakes.
  8. Add Spinach and Mushrooms to the Sauce and cook until wilted, about 3-5 minutes.
  9. Add cooked Pasta and sliced Chicken to the Sauce. Toss to combine.
  10. Serve immediately, garnished with extra Parmesan cheese.
