Instructions
  1. Prepare the Chicken: Marinate the Chicken breasts in Avocado oil, Lime juice, Adobo marinade, Smoked paprika, Sea salt, and Black pepper for at least 1 hour, or preferably overnight.
  2. Grill the Chicken to perfection (internal temperature of 165°F/74°C). Let rest and slice.
  3. Prepare the Dressing: In a blender, combine Extra virgin olive oil, Lime juice, Adobo sauce, Cilantro, Garlic, Cumin, Sea salt, and Black pepper. Blend until emulsified.
  4. Assemble the Salad: In a large bowl, combine Romaine lettuce, Heirloom black beans, Grilled corn kernels, Red onion, Grape tomatoes, and Roasted poblano peppers.
  5. Add the sliced Chicken and diced Avocado to the salad.
  6. Drizzle the Adobo-Cilantro vinaigrette over the salad and toss gently to coat.
  7. Garnish with Cotija cheese and Toasted pepitas before serving.
