Instructions
Prepare the Chicken: In a bowl, combine Olive oil, Lime juice, minced Chipotle peppers in adobo sauce, Cumin, Smoked paprika, Salt, and Pepper. Marinate the Chicken breasts in this mixture for at least 30 minutes.
Grill or pan-fry the Chicken until cooked through (internal temperature of 165°F/74°C). Let cool and slice.
Prepare the Dressing: In a separate bowl, combine all Dressing ingredients and blend until smooth.
Assemble the Salad: In a large bowl, combine Romaine lettuce, Black beans, Corn, Red onion, Cherry tomatoes, and Roasted red peppers.
Add the sliced Chicken and Avocado to the salad.
Pour the Dressing over the salad and toss gently to coat.
Top with Pepper Jack cheese and Tortilla strips before serving.
