Instructions
  1. In a large bowl, combine all Tamale Cakes ingredients. Mix until just combined; do not overmix.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour 1/4 cup of batter onto the hot surface for each cake. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  4. While the cakes are cooking, prepare the Chipotle Cream Sauce. In a small bowl, combine all Chipotle Cream Sauce ingredients. Stir well to combine.
  5. Serve the warm tamale cakes with a generous dollop of Chipotle Cream Sauce.
