  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Steam or boil Broccoli until tender-crisp. Drain well.
  3. In a saucepan, melt Butter over medium heat. Whisk in All-purpose flour and cook for 1-2 minutes to make a roux.
  4. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  5. Remove from heat and stir in Cheddar cheese, Salt, and Black pepper until cheese is melted and sauce is smooth.
  6. Combine Broccoli and Cheese Sauce in the prepared baking dish.
  7. In a small bowl, combine Crushed Ritz crackers and Melted butter. Sprinkle over the Broccoli mixture.
  8. Bake for 20-25 minutes, or until golden brown and bubbly.
