Instructions
In a bowl, combine all Marinade ingredients. Add the chicken thighs and marinate for at least 30 minutes, or up to 4 hours.
Heat 1 tablespoon of Ghee in a large skillet over medium-high heat. Add the marinated chicken and cook until cooked through, about 8-10 minutes. Shred the chicken with two forks.
To make the Avocado Crema, combine all Avocado Crema ingredients in a food processor or blender and blend until smooth and creamy.
Lay out a tortilla and sprinkle half of it with about 1/4 cup of the Oaxaca cheese, 1/4 cup of the shredded chicken, some roasted poblano peppers, and caramelized onions. Fold the tortilla in half.
Heat the remaining 1 tablespoon of Ghee in the skillet over medium heat. Cook the quesadilla for 3-4 minutes per side, or until golden brown and the cheese is melted.
Repeat with the remaining tortillas, cheese, chicken, peppers, and onions. Serve immediately with the Avocado Crema.
