Preheat oven to 400°F (200°C).
Gently unfold the Puff Pastry sheets on a lightly floured surface.
In a medium bowl, combine Cream cheese, Smoked gouda, Pickle relish, Bacon, Smoked paprika, and Cayenne pepper until well blended.
Spread the Filling evenly over the Puff Pastry, then top with the cooled Caramelized Onions.
Starting with one long side, tightly roll up the Puff Pastry into a log.
