A sophisticated take on the classic pinwheel, featuring rich smoked gouda, homemade caramelized onions, and thick-cut bacon.
Instructions
  1. Prepare Caramelized Onions: Heat Butter and Olive oil in a large skillet over medium-low heat. Add Onions and cook, stirring occasionally, for 30-40 minutes, or until deeply golden brown and caramelized. Stir in Brown sugar and Thyme during the last 5 minutes. Set aside to cool.
  2. Preheat oven to 400°F (200°C).
  3. Gently unfold the Puff Pastry sheets on a lightly floured surface.
  4. In a medium bowl, combine Cream cheese, Smoked gouda, Pickle relish, Bacon, Smoked paprika, and Cayenne pepper until well blended.
  5. Spread the Filling evenly over the Puff Pastry, then top with the cooled Caramelized Onions.
  6. Starting with one long side, tightly roll up the Puff Pastry into a log.
  7. Wrap the log in plastic wrap and chill for at least 30 minutes to firm up.
  8. Brush the log with Egg Wash.
  9. Cut the log into 1-inch (2.5 cm) thick pinwheels.
  10. Place pinwheels onto a parchment-lined baking sheet.
  11. Bake for 20-25 minutes, or until golden brown and puffed.
