Instructions
  1. Preheat oven to 375°F (190°C). Cook pasta according to package directions, but reduce cooking time by 2-3 minutes to ensure it's slightly undercooked.
  2. Drain pasta and spread in a single layer on a baking sheet. Bake for 18-22 minutes, flipping halfway through, until golden brown and crispy.
  3. While pasta is baking, prepare the Cheese Sauce. In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute, creating a roux.
  4. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly, until the sauce thickens. Remove from heat and stir in Cheddar cheese and Parmesan cheese until melted and smooth. Stir in Nutmeg.
  5. In a small bowl, combine all Sriracha Seasoning ingredients.
  6. In a large bowl, toss the baked pasta chips with the Cheese Sauce and Sriracha Seasoning until evenly coated. Serve immediately.
