Instructions
  1. Preheat oven to 375°F (190°C).
  2. Cook Pasta according to package directions. Drain and set aside.
  3. In a large skillet, cook Chorizo over medium heat, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Add Sauce ingredients to the skillet with the Chorizo. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  5. Combine cooked Pasta and Sauce mixture in a large bowl.
  6. Stir in 1 cup of Pepper Jack cheese and 1/2 cup of Monterey Jack cheese.
  7. Pour the mixture into a greased 9x13 inch baking dish.
  8. Top with remaining cheese.
  9. Bake for 20-25 minutes, or until bubbly and golden brown.
  10. Garnish with Mexican crema and Cilantro before serving.
