Instructions
  1. Preheat oven to 350°F (175°C).
  2. Cut chicken into small, nugget-sized pieces. Season Chicken with salt and pepper.
  3. Marinate chicken in Buttermilk and hot sauce for at least 30 minutes.
  4. Combine all Breading ingredients in a shallow dish.
  5. In a separate shallow dish, whisk together the Egg Wash ingredients.
  6. Dip each chicken piece in the Egg Wash, then dredge in the Breading mixture, ensuring it's fully coated.
  7. Bake chicken for 20-25 minutes, or until cooked through.
  8. While chicken is baking, combine all Sauce ingredients in a bowl.
  9. Slice mini buns in half. Spread Sauce on the bottom halves of the buns.
  10. Place a piece of cooked chicken on each sauced bun bottom.
  11. Top with shredded Monterey Jack cheese and the bun tops.
  12. Return to the oven for 5-10 minutes, or until cheese is melted and bubbly.
