Instructions
- Prepare the Chicken: Combine 1/4 cup buttermilk, salt, garlic powder, and paprika in a bowl. Add chicken breasts and marinate for at least 30 minutes, or up to 4 hours.
- Fry the Chicken: Remove chicken from marinade and dredge in flour. Heat vegetable oil in a large skillet over medium-high heat. Fry chicken for 6-8 minutes per side, or until golden brown and cooked through.
- Make the Sauce: In a small bowl, combine all Sauce ingredients. Set aside.
- Make the Biscuits: In a large bowl, whisk together flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add buttermilk, mixing until just combined. Do not overmix.
- Bake the Biscuits: Turn dough out onto a lightly floured surface and pat down to 1-inch thickness. Cut out biscuits using a biscuit cutter. Place biscuits on an ungreased baking sheet and bake at 400°F (200°C) for 12-15 minutes, or until golden brown.
- Assemble the Sandwich: Split biscuits in half. Spread Sauce on both halves. Place fried chicken on the bottom half of the biscuit. Top with the other half of the biscuit and serve.
