Instructions
Preheat oven to 350°F (175°C).
Toss baguette slices with Olive oil and Sea salt. Bake for 10-12 minutes, or until golden brown and crispy. Set aside.
Season Chicken with Olive oil, Rosemary, smashed Garlic, Salt, and Black pepper.
Heat Olive oil in a large skillet over medium-high heat. Sear Chicken skin-side down for 5-7 minutes, until golden brown and crispy. Flip and cook for another 5-7 minutes, or until cooked through.
Let Chicken rest for 5 minutes, then slice.
To make the dressing, whisk together Egg yolks, Lemon juice, Parmesan cheese, Garlic, Dijon mustard, Worcestershire sauce, Black pepper, and White truffle oil. Slowly drizzle in Olive oil while whisking constantly to emulsify.
In a large bowl, combine Romaine lettuce and sliced Chicken.
Pour dressing over the salad and toss to coat.
Top with shaved Parmesan cheese and artisanal Croutons. Serve immediately.
