What You'll Need

Equipment: Bowl, Plastic Wrap, Meat Tenderizer, Shallow Dish, Large Skillet, Wire Rack Shop these items →
Instructions
  1. Combine all Marinade ingredients in a bowl. Add Pork Chops and marinate for at least 30 minutes.
  2. Place Pork Chops between two sheets of plastic wrap and pound to 1/4 inch thickness.
  3. In a shallow dish, combine all Breading ingredients.
  4. Dredge each Pork Chop in the Breading mixture, pressing to adhere.
  5. Heat Olive Oil in a large skillet over medium-high heat.
  6. Fry Pork Chops for 2-3 minutes per side, or until golden brown and cooked through.
  7. Remove Pork Chops from the skillet and place on a wire rack to drain.
  8. To make the Sauce, heat Olive Oil in a separate skillet over medium heat. Add Capers and cook for 1 minute.
  9. Add Lemon Juice and Butter to the skillet. Cook until Butter is melted and Sauce is slightly thickened.
  10. Stir in Fresh Parsley. Spoon Sauce over the fried Pork Chops and serve immediately.
