Instructions
- Combine all Marinade ingredients in a bowl. Add Pork Chops and marinate for at least 30 minutes.
- Place Pork Chops between two sheets of plastic wrap and pound to 1/4 inch thickness.
- In a shallow dish, combine all Breading ingredients.
- Dredge each Pork Chop in the Breading mixture, pressing to adhere.
- Heat Olive Oil in a large skillet over medium-high heat.
- Fry Pork Chops for 2-3 minutes per side, or until golden brown and cooked through.
- Remove Pork Chops from the skillet and place on a wire rack to drain.
- To make the Sauce, heat Olive Oil in a separate skillet over medium heat. Add Capers and cook for 1 minute.
- Add Lemon Juice and Butter to the skillet. Cook until Butter is melted and Sauce is slightly thickened.
- Stir in Fresh Parsley. Spoon Sauce over the fried Pork Chops and serve immediately.
