Instructions
Combine all Brine ingredients in a bowl. Add Pork Chops and ensure they are fully submerged. Brine for at least 4 hours, or preferably overnight.
In a shallow dish, combine all Breading ingredients.
Remove Pork Chops from the brine, pat dry with paper towels. Dredge each chop thoroughly in the Breading mixture, pressing to adhere.
Heat Peanut Oil in a large, heavy-bottomed skillet over medium-high heat.
Carefully place the breaded Pork Chops in the hot oil, ensuring not to overcrowd. Fry for 4-5 minutes per side, or until golden brown and the internal temperature reaches 145°F/63°C.
Remove Pork Chops from the skillet and place on a wire rack to drain excess oil. Serve immediately.
