Instructions
  1. Preheat oven to 375°F (190°C).
  2. Season the Chicken breasts with salt and pepper.
  3. In a large skillet, cook chicken over medium-high heat until cooked through. Let cool slightly, then shred or dice.
  4. Cook the Spaghetti according to package directions. Drain and set aside.
  5. While the pasta is cooking, prepare the Sauce. In a large saucepan, melt Butter over medium heat.
  6. Add the Onion and sauté until softened, about 5 minutes. Add the Mushrooms and cook until tender, about 5 more minutes.
  7. Stir in the Flour and cook for 1 minute.
  8. Gradually whisk in the Chicken broth and Milk until smooth. Bring to a simmer, stirring constantly.
  9. Stir in the Sherry, Nutmeg, Salt, and Pepper.
  10. Reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.
  11. In a large bowl, combine the cooked Spaghetti, shredded Chicken, and Sauce.
  12. Pour the mixture into a greased 9x13 inch baking dish.
  13. Sprinkle with Parmesan cheese.
  14. Bake for 20-25 minutes, or until golden brown and bubbly. Let stand for 5 minutes before serving.
