Instructions
- Marinate the Chicken: In a bowl, combine the chicken breasts with buttermilk and hot sauce. Marinate for at least 30 minutes, or up to 4 hours.
- Prepare the Chicken: In a bowl, combine the flour, cornstarch, garlic powder, paprika, cayenne pepper, pepper, and salt. Dredge the marinated chicken breasts in the flour mixture, shaking off excess.
- Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken breasts for 6-8 minutes per side, or until golden brown and cooked through.
- Make the Waffles: In a bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the milk, melted butter, egg, maple syrup. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the chopped pecans.
- Cook the Waffles: Preheat your waffle iron. Pour batter onto the hot waffle iron and cook according to the manufacturer's instructions. Let cool completely.
- Assemble the Sandwich: Cut the waffles into squares slightly larger than the chicken breasts. Place a chicken breast on a waffle square, top with a scoop of salted caramel ice cream, and cover with another waffle square. Serve immediately.
