Instructions
  1. Prepare Fries according to package directions. For extra crispiness, consider double-frying.
  2. While fries are cooking, prepare the Chili. Heat Olive Oil in a large skillet over medium-high heat. Add Chorizo and cook, breaking it up with a spoon, until browned and cooked through.
  3. Drain off any excess grease. Add Onion and Garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in Fire-Roasted Diced Tomatoes, Black Beans, Chili Powder, Smoked Paprika, Cumin, Cayenne Pepper, Salt, and Pepper. Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
  5. Once fries are cooked, arrange them on a serving platter.
  6. Pour Chili over the fries and top with Shredded Cheddar and Monterey Jack Cheese.
  7. Garnish with Sour Cream or Mexican Crema, Fresh Cilantro, and Jalapeno slices. Serve immediately.
