Prepare Fries according to package directions. For extra crispiness, consider double-frying.
While fries are cooking, prepare the Chili. Heat Olive Oil in a large skillet over medium-high heat. Add Chorizo and cook, breaking it up with a spoon, until browned and cooked through.
Drain off any excess grease. Add Onion and Garlic to the skillet and cook until softened, about 5 minutes.
Stir in Fire-Roasted Diced Tomatoes, Black Beans, Chili Powder, Smoked Paprika, Cumin, Cayenne Pepper, Salt, and Pepper. Bring to a simmer and cook for 20-25 minutes, stirring occasionally.
Once fries are cooked, arrange them on a serving platter.
Pour Chili over the fries and top with Shredded Cheddar and Monterey Jack Cheese.
Garnish with Sour Cream or Mexican Crema, Fresh Cilantro, and Jalapeno slices. Serve immediately.
