Instructions
  1. Heat Olive Oil in a large pot or Dutch oven over medium-high heat.
  2. Add Ground Chuck and Chorizo and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add Yellow Onion, Jalapenos, and Red Bell Pepper to the pot and cook until softened, about 7-10 minutes.
  4. Stir in Chili Powder, Cumin, Smoked Paprika, Cayenne Pepper, Oregano, Salt, and Black Pepper. Cook for 1 minute more, stirring constantly.
  5. Add Canned Crushed Tomatoes, Canned Kidney Beans, Canned Black Beans, and Beef Broth to the pot. Bring to a boil, then reduce heat and simmer for at least 90 minutes, stirring occasionally.
  6. Stir in Dark Chocolate and Apple Cider Vinegar during the last 15 minutes of simmering. Stir until chocolate is melted.
  7. Taste and adjust seasonings as needed. Serve hot with your favorite toppings.
