4 Salmon fillets (6 oz each)
1 tsp Salt
1/2 tsp Black pepper
2 tbsp Ancho chili powder
1 tbsp Brown sugar

A simplified version of Chili's Ancho Salmon, perfect for a weeknight meal. It captures the sweet and smoky flavors of the original with readily available ingredients.
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine all Ancho Rub ingredients.
  3. Pat Salmon fillets dry and season with salt and pepper.
  4. Rub the Ancho Rub evenly over the top of each Salmon fillet.
  5. Place Salmon fillets on a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes, or until Salmon is cooked through.
  7. While Salmon is baking, prepare the Mango Salsa. In a medium bowl, combine all Mango Salsa ingredients. Mix well.
  8. Serve Salmon topped with Mango Salsa.
