Prepare the Spicy Mayo by combining all Spicy Mayo ingredients in a small bowl. Mix well.
Heat a grill or skillet over medium-high heat.
Cook the patties for 4-5 minutes per side, or until cooked through. During the last minute of cooking, place a slice of Cheddar Cheese on each patty to melt.
Toast the Hamburger Buns lightly.
Spread Spicy Mayo on both halves of each bun.
Assemble the burgers: bottom bun, lettuce, tomato, red onion, pickle chips, cheese-covered patty, and top bun.
