In a bowl, combine all Burger Patties ingredients and gently mix. Form into 4 patties.
Prepare the Spicy Mayo by combining all Spicy Mayo ingredients in a small bowl. Mix well.
Caramelize the Onions: Melt Butter in a skillet over medium heat. Add Yellow Onion and cook, stirring occasionally, for 20-25 minutes, or until deeply golden brown and caramelized. Stir in Brown Sugar during the last 5 minutes.
Heat a grill or skillet over medium-high heat.
Cook the patties for 4-5 minutes per side, or until cooked through. During the last minute of cooking, place a slice of Pepper Jack Cheese on each patty to melt.
Toast the Brioche Buns lightly.
Spread Spicy Mayo on both halves of each bun.
Assemble the burgers: bottom bun, Romaine Lettuce, tomato, red onion, dill pickle chips, cheese-covered patty, and caramelized onions. Top with the top bun.
