Instructions
  1. In a bowl, combine all Marinade ingredients. Add Chicken and marinate for at least 15 minutes.
  2. While Chicken marinates, prepare the Filling. Slice Onion, Mushrooms, and Bell pepper.
  3. In a separate bowl, combine all Sauce ingredients. Set aside.
  4. Heat a large skillet or cast iron pan over medium-high heat. Add marinated Chicken and cook until fully cooked, about 6-8 minutes. Remove from skillet and set aside.
  5. Add Filling to the skillet and cook until softened and slightly browned, about 5-7 minutes.
  6. Slice the cooked Chicken. Return Chicken to the skillet with the Filling and toss to combine.
  7. Warm tortillas according to package directions.
  8. Serve Chicken and Filling in warm tortillas with Sauce and your favorite toppings (sour cream, guacamole, cheese).
