Instructions
  1. Combine all Spice Rub ingredients in a small bowl. Rub generously over Chicken breasts. Let rest for at least 30 minutes, or up to 2 hours.
  2. Prepare the Filling. Slice Red onion, Mixed mushrooms, Red bell pepper, and Yellow bell pepper.
  3. In a separate bowl, combine all Sauce ingredients. Set aside.
  4. Heat Olive oil in a large cast iron skillet over medium-high heat. Sear Chicken breasts for 3-4 minutes per side, until browned. Reduce heat to medium and continue cooking until fully cooked, about 6-8 minutes total.
  5. Remove Chicken from skillet and let rest. Add Filling to the skillet and cook until softened and slightly caramelized, about 8-10 minutes.
  6. Slice the cooked Chicken. Return Chicken to the skillet with the Filling and toss to combine.
  7. Warm tortillas according to package directions.
  8. Serve Chicken and Filling in warm tortillas with Sauce and your favorite toppings.
