To make Caramelized Onions: Heat butter and olive oil in a skillet over medium-low heat. Add onions and cook slowly for 30-40 minutes, stirring occasionally, until deeply golden brown and caramelized. Stir in brown sugar and balsamic vinegar during the last 5 minutes.
In a bowl, combine all Burger Patties ingredients and gently mix. Form into 4 patties.
Cook the patties in a cast iron skillet over medium-high heat for 4-5 minutes per side, or until cooked to desired doneness.
While patties cook, prepare the Sauce by combining all Sauce ingredients in a small bowl. Mix well.
Lightly toast the Potato rolls.
Spread Sauce on both halves of each bun.
Place Butter lettuce, tomato, and caramelized onions on the bottom bun.
Top with a cooked patty and a slice of Aged white cheddar cheese.
Cover with the top bun and serve immediately.
